Ethiopia Natural

Ethiopia is where coffee begins. Not metaphorically — literally. The coffee plant is thought to have been discovered here, and for more than 15 million farmers and sector workers across the country, it remains the backbone of daily life and livelihood. In the Sidama Zone, that relationship between people and plant runs especially deep: family farms, cooperative processing, and a traditional approach to the craft that hasn’t needed to be reinvented because it was never broken.

This coffee is processed the natural way — cherries dried whole on raised beds, sorted by hand, the fruit slowly imparting its sweetness into the bean over weeks in the open air. It’s the oldest method in coffee, and in the right hands, the most expressive. Grown at 1,700–1,900 meters on Nitisol soils, indigenous heirloom cultivars — varieties that exist nowhere else on earth — yield a med-light roast with notes of milk chocolate, ripe fruit, and caramel that linger long after the cup is empty.
