In the Cerro Azul highlands of Honduras, the mountains are lush, the temperatures cool, and the mist arrives most mornings without being asked. It’s the kind of climate that slows everything down — including the cherries, which develop layered sweetness and balanced acidity over a long, unhurried maturation. Coffee has been part of this landscape for generations, a source of livelihood and a point of pride for the farming families who tend it.

The COHORSIL cooperative brings those families together, providing training, technical assistance, and shared facilities so that smallholder producers can improve their yields while caring for the land. The cooperative also invests in education and reforestation — treating coffee not just as a crop, but as a foundation for community growth. Grown at 1,200–1,600 meters, the Typica, Bourbon, and Catuai varieties are fully washed and sun-dried, certified SHG (Strictly High Grown) and EP (European Preparation) — marks of exceptional quality and careful sorting. The result is a medium-dark roast with notes of apple, dark chocolate, and nuts.
